Boning Knife
Semi-flexible, curved blade (helps move the blade 'around' bones), and shorter blade gives better knife control. Perfect for trimming meats, muscle boning, slicing small cuts, and cutting a chicken carcass. The rounded ridge on the back of the blade greatly reduces all risks of injury. Can be sterilized up to 120C/250F. Comes in a protective sleeve.
